Corchorus Olitorius Egyptian Spinach is an extremely popular summer crop in our region. It goes under many names Molokhia/Molokheiya (and many other methods to spell it), salad mallow, Jute mallow, Jew's Mallow and West African sorrel to name only some. It is believed that it has been first discovered in Egypt prior to Christ, and has been a staple food since period of the Pharaohs. Molokheiya, بذور جرجير which is an Egyptian term which translates to "vegetable for kings" is the Egyptian name of the soup. Wikipedia says that a sick Egyptian King, around 6000BC, requested hot soup. He was then healed through the consumption of hot soup on a daily basis. Cleopatra might have also enjoyed the similar soup. Egyptian Spinach together with its numerous close relatives can be found in Africa, India, and many other parts of Asia. It will grow in most subtropical and tropical regions all over the world.

It can be grown as an annual. It can grow to about a metre in height, produces small yellow flowers and produces edible seeds in pods. The edible leaves can be harvested continuously. It is extremely hardy and quick growing. It is a relative of okra , and it can thrive in many of the same conditions as Okra. It does not like shade.

Many of the species in the genus Corchorus are used as a source of jute as they have long, strong fibres in their stalks. Jute was utilized over time to create coarse yarn, which was later used as rope, and also as sacking fabric. This was best done with the tallest and most unbranched stems. Stems would be soaked for several days so the plant matter could rot and the fibres easily removed. Then they were washed dried, and then sorted to use. In some regions, this fibre can also be used to create paper. Corchorus Olitorius, also known as Egyptian spinach, is best used to make jute. However many of its cousins are also suitable for other functions.
