Corchorus Olitorius, Egyptian Spinach is a well-loved summer crop in our region. Molokhia/Molokheiya as well as many other names. It is believed to have been first discovered in Egypt before Christ, and has been a staple food since the days of the Pharaohs. Molokheiya, which is an Egyptian term which translates to "vegetable for the king", is the Egyptian term used to describe the soup. It is planted as an annual. It grows up to a maximum of a metre and produces small yellow flowers, and produces edible seed pods, and edible leaves that are easily harvested. It is extremely tough and is able to grow rapidly. It is a relative of okra that can be grown in the same conditions like Okra. But, it doesn't prefer shade.

In Egypt the leaves are utilized in a traditional soup that includes coriander, garlic and meat. In other regions it is cooked into a stew made with rice, cassava, بذور برسيم and even chicken meat. There are numerous recipes for this vegetable. Leaves can be dried and then powdered to make tea. It can be preserved for use in soups and stews for added flavor as well as to thicken dishes . Due to their long, sturdy stalks the Corchorus genus's members can be grown to make Jute. The stems were soaked for many days, so that the vegetable matter would rot and the fibres easily removed. Then they were washed dried and sorted for use. In some areas where this fibre is found, it can be used to make paper. Corchorus Olitorius, also known as Egyptian spinach, is best utilized to create Jute.
